Our Story

Passion for Neapolitan Pizza and Everything Italian

Wayne Sieve’s first experience with Neapolitan-style pizza was in Brussels, Germany. Afterwards, his curiosity would bring him to Naples, Italy where Neapolitan Pizza was created.

 

Wayne Sieve and Kendele Noto Sieve traveled several times to Italy, specifically the Campania Region, and fell in love with Italy's food and culture. The Sieve’s returned home excited to share their experiences and research.

 

                 Wayne directed his passion to recreating the same Neapolitan Pizza he loved in Italy and launched his career. In spring of 2017, Wayne and his wife, Kendele Noto Sieve started a mobile pizza trailer with a wood-fired oven serving Neapolitan pizzas in the counties of St. Charles and St. Louis. With the success of the pizza trailer and the upcoming retirement of Jasper Noto, her father, who she worked with side-by-side at their well-known Italian bakery, J.Noto Bakery in St. Charles County, Wayne and Kendele decided to join forces and open NOTO restaurant in the same location as the bakery.

NOTO restaurant officially opened for business on January 6, 2020. The cuisine is primarily southern-style Italian influence with Neapolitan Pizza being the focus of the menu. The 3-ton Neapolitan wood-fired oven, hand-crafted in Naples, Italy, sits directly in the middle of the dining room as a focal point of the restaurant.

Now, the same Neapolitan pizza the couple experienced in Italy is served at their restaurant along with appetizers, hand crafted pastas, salads, cocktails, and desserts. The quality of the ingredients and the simplicity of the Italian-style cuisine is unmistakable in every dish on the menu.
